Tabbouleh and fattoush calories: per cup and per 100 g
A cup (200 g) of tabbouleh has about 106 kcal and a cup of fattoush about 104, at 53 and 52 kcal per 100 g, in lab analyses by the Lebanese University [1].
The olive oil decides most of it: these samples had about 2 g of fat per 100 g, and each extra tablespoon of oil adds about 120 kcal (calculated).
Per 100 g
| Salad | kcal | Protein | Fat | Carbs |
|---|---|---|---|---|
| Tabbouleh [1] | 53 | 1.9 g | 2.3 g | 6.1 g |

Per 100 g of the edible portion, from lab analyses of samples bought in Lebanon. [1]
Per serving
The serving sizes are the ones the researchers used for their exchange list, with a household measure:
| Food | Serving | kcal |
|---|---|---|
| Tabbouleh | 200 g (1 cup) | 106 |
| Fattoush | 200 g (1 cup) | 104 |
| Baba ghanouj (eggplant salad, no tahini) | 100 g (6 tablespoons) | 39 |
| Green beans in oil (loubieh) | 100 g (½ cup) | 62 |
| Bulgur with tomato | 100 g (½ cup) | 146 |
| Dandelion greens in oil (hindbeh) | 50 g (¼ cup) | 117.5 |

What changes the number
- The dressing. Most of a salad's calories are its olive oil; a tablespoon adds about 120 kcal (calculated). Hindbeh, cooked in oil, has 22.4 g of fat per 100 g.
- Fried bread. Fattoush with fried rather than toasted bread has more calories than this sample.
- Bulgur. Tabbouleh with more bulgur and less parsley has more calories.
